White Trash Recipe of the Week
Poor Man's Scramble
*I am not a chef and I do not measure.
Ingredients:
3-4 eggs
Cooking oil or butter if you're feeling flush
1 piece of bologna
Handful of shredded cheese
Salt/pepper to taste
1/4 of onion diced
Procedure:
Put some oil or butter in a frying pan. When it heats up, add the onion and cook until very brown. Crack the eggs into a coffee mug. Add a handful of cheese and some salt and pepper. Rip up a piece of bologna and also add that to the eggs. Mix the coffee mug mixture with a fork. Pour into the frying pan and scramble. It should be done when the cheese has melted into the eggs and the bologna is browned.

Oh Yum! Totally reminds me of the meals that my dad used to make us when Mom was gone. Except, you have to fry the bologna until it is really crisp. Then you add it to the egg mixture. And, to give it added pizazz, you can also skip putting the fried bologna in the eggs, and instead put it between 2 slices of toast that has been spread with butter AND grape jelly. MMMM MMMM GOOD! Oh, precious memories of youth (and a Cast-Iron Stomach!) :)
I've never considered bolgona with jelly. Maybe I will have to try that sometime. I like peanut butter with cheese so it's combining a protein with a sweet too.
I love a fried bologna sandwich, so this sounds right up my alley. Na
